I would like to set up a feature that notifies me via email when a funnel or metric goes down. Do you know if Fullstory has it?

That’s a great question. While we don’t currently have a way to trigger a notification email (or Slack message) from Funnels or Metrics, we recommend translating your Funnel or Metric filters to a set of conditions in a new Segment and create a new Alert for that Segment. This will notify yourself in-app, via email, or to a specific Slack channel (provided that you've set up the Slack integration) whenever the daily, weekly, or monthly active users in that Segment hit a specified threshold. If you aren’t sure whether you can translate the Funnel or Metric to a Segment, please don’t hesitate to reach back out with more context and I can provide more insight into how you can achieve that.
That said, our team has definitely heard this request before and is actively thinking through solutions! I'll let them know that this is important to you to make sure you're the first to know when a solution is ready. 😊
I get a weekly email in my inbox informing me about various metrics, etc that went down or had any fluctuations. How is this email curated? is it default template? Can I customize it?

You can also change that to Daily, Weekly, or Off depending on your preferences, and that’s in Settings > Account Management > Notifications

Are the options in the Digest segments customisable? Or is this a static list that we can chose from?

Yup, customizable. You would subscribe to or unsubscribe from each Segment that you want on your Digest.
